The word “Millets” refers to all species of cereals with very small grains. Overall, the micro and macro-nutrient composition of millets is similar to other cereals. They are particularly high in phenolic phytochemicals and free of gluten. Millets are processed into a wide variety of conventional and temporary foods and drinks around the world. The processes if milling, fermenting and applying heat treatments can significantly alter the composition of food. They are considered as a “Miracle grains: as they can grow under drought conditions providing nutritional benefits comparing other cereals. Millets are endowed with rich source of minerals, micronutrients, phenolic compounds and anti-oxidants. They can be used both as a supplementary dietary product as well as therapeutic potential purposes. Due to its wide range of chemical constituents and properties, it needs more attention for further research. Various ophthalmological disorders occur due to nutritional deficiency. So, by adding millets into daily routine, will be helpful in adding nutrition to the individual.
