Abstract

Background:Degue is a traditional fermented milk and cereal food widely consumed in West Africa and now found in N Djamena (Chad), where its production remains largely artisanal and poorly controlled. This descriptive, cross-sectional study, conducted from October 2022 to March 2023 in five districts (arrondissements) of N Djamena, aimed to assess the microbiological quality of degue produced and sold in the city. Material and methods : A sociodemographic survey was carried out among 247 individuals (15 producers, 13 vendors, and 219 consumers), and 20 degue samples (16 artisanally produced and 04 of the DJAMIL brand) were analyzed at the laboratories of the Food Quality Control Center (CECOQDA) and the IRED (Livestock Research Institute for Development).
